Charbroiled Chttinad Spiced Oyster


Fresh oysters{preferably belon} – 4
Lemon juice – 2tsp
Sea salt – 1/4tsp
Fresh Coconut milk – 3tsp
Chettinad Spices – 1tsp

Recipe for chettinad masala

Cumin seeds – 5tsp
Coriander – 12tsp
Red chilli powder – 4tsp
Dried stone flower{kalpassi} – 1tsp
Curry leaves – 3tsp
Marathi mokku – 5tsp
Pepper corns – 12tsp
Cinnamon – 2tsp
Star anise – 2tsp
Green cardamom – 2tsp
Dry roast all the spices separately and then make a fine powder.


1. Shuck the oyster and clean, reserve the oyster liquid.
2. Sprinkle sea salt,chettinad spice and load it to the grill.
3. When the liquid bubbles, add a slash of coconut milk and lemon juice and cook it for a minute.
4. Serve it with a light green salad.
