Chicken Chawal Palak Soup 1

This nutritious soup is ready in just half an hour. Palak is an excellent source of Vit A, rice gives you carbs, chicken brings protein and without its skin is also low in fat. This is a whole meal in a bowl! Add chopped green chillies for spice.

Prep Time – 10 mins

Cook Time – 30 mins

INGREDIENTS:

Basmati Rice – 150 gms
Chicken fillets – 250 gms
Chicken stock – 2liters
Spinach leaves – 350 gms
Lemon juice – ` tbsp
Black pepper powder – 1/2 tsp
Green chillies to taste
Salt to taste

Process:

1. Place the rice in a sieve and rinse under cold running water until the water runs clear.
2. Place the rice in a large saucepan with the chicken stock and bring to the boil. Simmer for about 10 minutes.
3. Add the sliced chicken to the pan and simmer, partly covered, for a further 5 minutes.
4. Stir in the spinach and continue simmering for another 5 minutes or until the rice is tender and the chicken and spinach are cooked.
5. Season with the lemon juice and pepper, then serve hot.
