Doodh paank or doodh pak- pudding is prepared in many Konkani homes during Diwali. This comes out to be a lip smacking tasty dish. Let us try this recipe at home and experience the excellent taste of it.


Almonds   – 1/2 cup
Milk   – 1 liter
Sugar  – 250 grams
Cardamom powder – 1 teaspoon
Saffron   – 1 teaspoon
Pistachios  – 1 tablespoon
Raisins  – 1 1/2 tablespoon

1. Soak the almonds in warm water for 1 hour.
2.  Peel and grind to a fine paste.
3.  Dissolve the saffron in 1 tablespoon of warm milk and keep aside.
4. Boil the milk in a heavy bottomed pan, stirring constantly.
5.  Add the almond paste and simmer for 30-35 minutes, stirring regularly.
6. Add the saffron, sugar, Pistachios and raisins.
7.  Cook on a very low flame till thick.
8. Sprinkle cardamom powder.
9. Serve doodh pak hot or chilled
