Fried Potato and Spinach

This dish is very simple to prepare. The spices add an incredible delicious flavor to the dish without overwhelming it.

Ingredients

  • 4 potatoes, peeled & cubed (about 250 grams)
  • One spoon of oil
  • 1 large onion, chopped
  • 4-5 garlic cloves, grated
  • thumb-sized piece ginger, grated
  • about 250 grams spinach
  • 1 1/2 tsp cumin
  • 2 tsp coriander
  • 1 tsp turmeric
  • 1 tsp paprika
  • salt, to taste

preparation

  1. Boil the potato cubes in salt water until they’re done.
  2. In a large frying, heat oil and sauté the onion pieces, garlic, and ginger until the onion becomes translucent.
  3. Add the spinach and let it cook for several minutes. Take the frying pan off the heat and let the spinach mix slightly cool.
  4. In the meantime, roast the cumin in a dry pan for about 15-30 seconds.
  5. Purée the spinach mix in a food processor. Pour the purreed spinach back into the frying pan. Add the spices and season to taste with salt. Stir in the potatoes.
