Spinach Chicken

Spinach Chicken

Chicken cooked with pureed spinach and spices. A refreshingly nutritious preparation.

Cooking time (approx.): 26 minutes

INGREDIENTS

Chicken – 500gms
Spinach – 500gms
Thick yoghurt whisked – 4tsp
Garam masala – 1tsp
Ginger garlic paste – 2tsp
Tomatoes{chopped} – 2
Onions{chopped} – 2
Green chillies{chopped} – 6
Bay leaves – 2
Green cardamoms – 4
Cinnamon stick – 1 inch
Oil – 2tsp
Salt to taste

PROCESS

1. Cook the spinach leaves (discard hard stems) in boiling salted water for 2 minutes.
2. Drain and refresh in cold water.
3. Puree in a blender with the green chillies.
4. Heat oil in a heavy-bottomed pan and fry the bay leaves, cardamoms and cinnamon for a few seconds till aromatic.
5. Add the onions and fry for about 3 minutes or till they are lightly browned.
6. Add the ginger-garlic pastes and fry for about 2 minutes.
7. Add the tomatoes and fry for about 3 minutes.
8. Add the chicken and sprinkle salt to taste. Mix well.
9. Cook on low heat for about 5 minutes.
10. Stir in the spinach puree. Cook on low heat for about 8 minutes or till the chicken is tender.
11. Stir in the yoghurt and the garam masala. Simmer for about 3 minutes.
