Thai Chicken with bananas and Peanut Sauce

  • 2 chicken breasts, cut into thin strips
  • 1 onion, thinly sliced into rings
  • 1 tbsp sesame oil
  • 2 ripe bananas, sliced
  • 1 can coconut milk
  • 3 tbps peanut butter
  • 1/4 tsp cinnamon
  • 1 dash of nutmeg
  • 1/2 tsp cumin
  • 1 tbsp sugar
  • 1 tbsp dark soy sauce
  • 1 tbsp roasted, unsalted peanuts, chopped
  • salt, pepper


  1. In a large pan, brown the chicken along with the onion. Once the onion slices become translucent, add the banana slices and cook for a few minutes to soften the banana.
  2. Cook until the chicken is done.
  3. Add the coconut milk and the peanut butter.  Stir in the other ingredients as well, except for the chopped peanuts.
  4. Season with salt and pepper.
  5. Let this dish simmer until the sauce reached the desired consistency.
  6. In case the sauce is too thick, add a little water or chicken broth to make it thinner.
  7. prinkle with the peanut pieces. Serve with rice and a salad.
